During the past month, I brewed a batch of Four Leaf Irish-Style Stout and Elwha Redd Ale.  According to Guiness's tradition (co-opted by F&L), the stout was brewed at least 6 weeks before tapping the kegs.  According to F&L, Four Lead Stout is for St. Patrick's Day!  I just sampled the freshly carbonated beer in the brite tank.  It turned out really good.  I swapped out the black malt with chocolate and didn't futz with it anymore.  There is a nice minerality with the usual roastiness.  It will be great with local oysters and traditional Irish fare.


The Elwha Redd would be ready, too, but this is a slow time of year around here.  Beer has not been moving, yet I kept brewing.  Refridgerator storage is maxed out.  Kegs are not turning over quick enough.  I need to pause, or pour F&L at ski areas.  Kegs were piled high on the White Pass loading dock on a nice bluebird powder Thursday earlier this month.    We need a ski area out here on the peninsula, with more than a couple rope tows and poma lift and lodges with a great pub. I envision having beer and brats by the slopes like on the Lauberhorn!


The Dungeness Dunkel Weizen brewed last November is pairing really well with the restaurants in Sequim and Port Angeles.  It goes great with Asian, Mexican and more traditional Euro-American pork dishes, and borscht.

The present is a gift, that is why they call it a present.  Presently, there is no better beer like the one in front of you!  Ah yes, but there are so many beers out there.  F&L beers and other brewers who look no further than a day's journey for their ingredients are the beers that best fill a pint glass within arms reach.  This is the main thing!  Call it what you will; however, the slow food movement has been a cornerstone of the F&L brewery, so call it slow beer.


Since 2009, F&L has kept it local, authentic and classic.  Now, F&L is embarking on a voyage of discovery of other like-minded slow foodies.    I know they are out there.  Every region is fulll of them.  I had Sweet Carolina Baby Back Ribs tonight for dinner.  They went exceptionally well with F&L Discovery Stout!  South Carolina seems so very distant in so many ways other than that measured in Euclidean coordinates (an engineering geek out diversion).  The connection has been made and there is no denying it or turning back..  The past is history and the future is a mystery.  Hopefully, this beer blog* can show how these connections can be made to make a better future possible.
